This month – Cabernet Sauvignon, the perfect winter wine!


With its famous terra rossa, red and limestone soil, Arguably, Australia’s most famous terrioir, the Coonawarra in South Australia is considered to be one of Australia’s premium Cabernet Sauvignon regions. Emma Raidis will be presenting her Billy Cabernet Sauvignon, from the region and I am going to ask her to help us to understand how this soil makes the wines so unique.


The “floor” of the Yarra Valley is considerably warmer than the rest of this cool climate region – especially where Mandala Wines Dixon’s Creek site is located. This makes it idea for ripening Cabernet Sauvignon. Having crafted Cabernet in both Margaret River and the Yarra Valley, I am going to ask Don Pople from Mandala, to give us his unique perspective on Cabernets from these two famously different regions.
